Banana Whoopie Pies

My anniversary with my beau was this week. We have been dating for four years! I'm sure most of you guys don't know this, but we are in a long distance relationship (most of the time). Finally we are living together but at the end of the year I will have to go back home to America. It's funny but during our four year relationship, this was the second time we got to be together on our anniversary. So it was really special.

We ate at Oskars, in Burleigh. I should of took pictures, but I felt awkward whipping out my camera since it was a really swanky place. I made my beau a gift, and I'll try to take some pictures of it.

 I made banana whoppie pies. They are pretty fantastic. The first time I made these, I just used a spoon. The best way to get perfect whoopie is to use a cookie scoop. I believe the scoop makes large size whoopies.


Banana Whoopie Pies
(Recipe via Baking Bites)
Yield: 2 dozen cookies (1 dozen sandwich cookies)

2 1/4 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 cup butter, room temperature
1 1/4 cups sugar
1/4 cup vegetable oil
1 large egg
1 tsp vanilla extract
3/4 cups mashed banana (2 medium)

Cream Cheese Filling
3 oz cream cheese, room temperature
4 tbsp butter, room temperature
1 tsp vanilla extract
1 1/2 – 2 cups confectioners sugar

Cookies
Preheat oven to 350 F/ 176.
Line a baking tray with parchment paper.
In a bowl, whisk together flour, baking powder, salt cinnamon.
In a large size bowl, cream the butter and the sugar with an electric mixer until light.
Beat in egg and vegetable oil, followed by vanilla extract and mashed bananas
Add flour mixture and stir with a wooden spoon until it is just incorporated.

Drop 2 tablespoon (1.5-inch balls)  balls on the parchment paper and bake for 12-14 minutes, or until cookies are lightly brown along the edges and set in the center. [Since I used my cookie scoop, I only did one scoop]

Filling
In a medium bowl, beat together the cream cheese and butter until smooth.
Blend in vanilla extract and confectioner sugar until mixture is smooth and thick.
