Sweet & Sour Chicken

Happy New Years...even though I'm two weeks late.

I have been super busy at work lately. I have not had a day off since last Thursday so I'm pretty burnt out! I just want a break or a mini vacation for a bit but noo I'm off to work today! For my first real job, its been pretty intense! I work with two pastry cooks and my pastry chef. I don't think anyone really likes me at all and I try not to care but its pretty hard! Oh the next couple of weeks I'll be a casual worker( less hours).

I made Sweet & Sour Chicken with my beau. I love Sweet & Sour Chicken, its the only thing that I want to get when I order Chinese besides the noodles of course. Any who, I just went on Pinterest for a recipe, of course I scroll for the best pictures and I say I'll use that recipe!

Well it is very easy to make so that's definitely a plus! But, I did not like how it tasted! I wanted it to be exactly like what I order from restaurants but it did not come close to me. It started tasting good the first couple of bites but then it began to taste sickeningly sweet. It could of been just me, because my boyfriend loved it and he even ate most of mine! Soo I probably wouldn't make it for myself, maybe it needs some tweaking with the amount of sugar. Maybe I'll just find a jar of the sweet and sour sauce and be content.

Sweet & Sour Chicken

Chicken Coating:
4 boneless chicken breasts
1 cup cornstarch
2 eggs (beaten)
0.25 cup canola oil
salt/pepper (to taste)

Sweet and Sour Sauce
3/4 cup sugar
4 tbs ketchup
1/2 cup vinegar
1 tbs soy sauce
1 tsp garlic salt

Preheat oven to 350F. Prepare chicken by rinsing it in water and cutting it into cubes. Season the cubed chicken with pepper and salt. Next, coat the chicken in cornstarch then dip into eggs. Heat the canola oil in large skillet and cook the chicken until it begins to brown. The chicken should not be cooked completely! Place the chicken in a greased baking dish.Whisk all of the sweet & Sour Sauce ingredients together in a bowl. Pour the sauce over the chicken, making sure it completly covered. Bake for one hour, rotating the pan every 15 minutes.
